Coach Kilgore calling Mindy “Cindy” is a reference to Mindy’s original name being Cindy according to the series’ pitch bible.
Irwin asking if it's possible to learn the power to win a football game using cartoon-y shenanigans, and Mandy saying "Not from a football coach", is a reference to the 2005 film Star Wars: Episode III - Revenge of the Sith. A lightsaber ignition sound is heard right after Mandy speaks.
